A plate is the smallest part of a support system and the one that decides whether the rest of it interoperates. The profile is a shape rather than a specification: the dovetail associated with Arca is cut by a great many makers to dimensions that are broadly compatible but published by none of them as a single standard, which is why two plates of the same nominal type can sit differently in the same clamp. Proprietary rectangular plates are unambiguous within one maker and useless outside it. The screw underneath is 1/4-20 on nearly everything and 3/8-16 on heavier gear, and the head is either a coin slot, a hex socket or a folding D-ring — the last one removes the need to carry a tool. Anti-twist provision is what stops a plate rotating under a long lens: a lip that catches the camera base, a rubber pad, or a plate shaped to one body. Length decides how far the balance point can travel, which matters for a telephoto and not at all for a compact. Then material and finish: aluminium is the norm, and a plate that is thicker at the clamp than at the ends costs nothing to carry.
